A low carb eggplant pizza alternative recipe that uses sliced eggplant instead of a carb-heavy breaded crust. Tons of flavor and super simple to assemble, this recipe is gluten-free, vegetarian and keto- friendly.
1 large eggplant
1 Tablespoon olive oil
1/2–1 cup no sugar added pizza sauce or tomato paste
sea salt, to taste
ground pepper, to taste
3/4 cup shredded mozzarella cheese or parmesan or cheddar ( your choice)
¼ cup chopped fresh oregano
crushed red pepper (optional)
1. Preheat the oven to 350 degrees.
2. Slice the eggplant into rounds. Brush or rub a little olive oil on each side of the eggplant slices and place on a baking sheet lined with parchment paper or a baking stone. Sprinkle with salt and pepper. Place in oven for 7-10 minutes, or until eggplant is cooked.
3. Once the eggplant is cooked, remove from the oven. Spread the tomato sauce over each slice, followed by your choice of cheese. Season with oregano and chili flakes.
4. Then place back into the oven until the cheese is melted. Add some fresh herbs to serve.
