Cheezy Low Carb Buns

These buns are super soft and fluffy, perfect for hamburgers, sandwiches, so you don’t have to skip the bun. These buns are also keto-friendly and are made with just a few ingredients.


Inspired to make these using the same recipe as my almond bread.

I added some grated cheddar cheese to the mix.


INGREDIENTS Dry ingredients

  • 2 cups blanched almond flour.

  • 1/4 cup flax meal (optional)

  • 1/4 cup grated cheddar cheese

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon fine texture sea salt (such as Real Salt)


Wet ingredients

  • 5 eggs

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon apple cider vinegar

To make these cheesy buns, combine all the dry ingredients in a large bowl. Use a spatula to break any clumps. You can sift the flours to get rid of the bigger chunks of almond flour and reduce the gritty taste.


  • To begin put your oven on 350 degrees.

  • I used a hand mixer to whisk together the eggs, olive oil, apple cider vinegar, baking soda, and a pinch of salt. It’s essential to beat the eggs first for fluffy buns.

  • Add the wet ingredients and the beaten eggs to the dry ingredients and combine well.

  • With a large spoon, scoop it out onto a greased muffin/donut mold.

  • Place the buns in the preheated oven and bake for 25-35 minutes, depending on the size of your rolls. You know they are baked when they are beautifully golden browned.



Here are a few variations you can add to your low carb bread:

  • Garlic and herb: Add minced garlic and dried herbs like oregano, thyme, and rosemary to the mix for a savory flavor.

  • Cheesy: Mix shredded cheddar, parmesan, or other hard cheese into the mix for a cheesy keto bun.

  • Everything bagel seasoning: Mix in everything bagel seasoning, which usually includes sesame seeds, poppy seeds, dried garlic, dried onion, and salt, for a savory and slightly tangy flavor.

  • Cinnamon and nutmeg: Add cinnamon and nutmeg to the mix for a sweet and spicy flavor.

  • Jalapeño and cheddar: Mix diced jalapeños and shredded cheddar into the mix for a spicy and cheesy bun.

  • Bacon and chives: Add crumbled cooked bacon and chopped chives to the mix for a smoky and savory flavor.
