
INGREDIENTS
4 cups Oats
3-4 overripe banana
1/2 cup sliced Almonds or Pecans or a mix of both sliced
1/2 cup cranberries or raisins
3 tbsp flax seeds or pumpkin seeds
1/3 cup shredded coconut flakes
4 tablespoons Honey
2 tablespoons coconut oil
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
METHOD
Preheat Oven to 350 degrees F
In a large bowl, mix together all dried ingredients, including ground cinnamon. (leave out the raisins/cranberries and only add these when the granola is finished baking)
In a separate bowl whisk together the oil and honey.
Mash the overripe bananas and mix it with the vanilla extract
Pour wet ingredients over the dry, and mix until evenly blended.
Spread in a greased baking pan.
Bake for about 1 hr in the preheated oven, stirring every 20 minutes or until toasted.
Let it cool completely before storing in an airtight container.
Warning: Your kitchen is going to smell like you have just baked a banana bread! Enjoy!
