Homemade Banana Granola

INGREDIENTS
4 cups Gluten Free Oats You can also get the quick oats or any other oats sold in the grocery but it may contain gluten.Bob’s Red Mill
3-4 overripe bananas
cup ½Almonds or Pecans or both sliced
1 tablespoon chia seeds optional
1 tablespoon flax seeds or pumpkin seeds optional
1/3 cup Shredded Dried Coconut
1/3 cup Chocolate Sprinkles optional
4 tablespoons Agave or Pure Honey or Coconut Sugar
2 tablespoons Coconut Oil
1 teaspoon Ground Cinnamon
1 teaspoon Vanilla Extract
1 teaspoon Vanilla Extract
METHOD
Preheat Oven to 350 degrees F
In a large bowl, mix together all dried ingredients, including ground cinnamon.
In a separate bowl whisk together the oil, agave/honey,
Mash the overripe bananas and mix it with the vanilla extract
Pour wet ingredients over the dry, and mix until evenly blended.
Spread in a greased baking pan.
Bake for about 1 hr in the preheated oven, stirring every 20 minutes or until toasted.
Let it cool completely before storing in an airtight container.
