Quinoa Pilaf


  • 1 tbsp. extra virgin olive oil

  • 1 medium onion, diced

  • 3 carrots, peeled and shredded

  • 1 large head of broccoli, trimmed, washed and shredded

  • 2 cups of green kale, ribs removed, washed and shredded

  • 1 cup of quinoa

  • 3 cups low sodium veggie broth

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp sea salt


1. Using a food processor, shred onion, carrots, broccoli and kale

2. In a medium saucepan, sauté shredded veggies in olive oil 2-3 minutes

3. Add quinoa, broth and spices

4. Cover and bring to a boil

5. Reduce heat to med-low, and simmer for 12-15 minutes, until

liquid is absorbed.

This meal can be either served warm or cold
