Don’t be scared that your kids won’t eat these bite sized nutrient filled entrée sides. When trying to get my Tommy to eat veggies, it’s always left behind in his plate, unless its well hidden in his food. But when making veggie fritters, the bright coloured veggies can be seen clearly and Tommy begs for more. Try these veggie fritters with your kids and I promise it’s going to be a hit!
Ingredients
2 medium zucchini grated
1 small sweet potato grated
1 gram can of corn kernels drained
A small handful of basil leaves finely chopped
1 cup white flour Bob Red Mill's
4 eggs
olive oil to fry in
Tomato wedges and fresh basil leaves to serve
