If you are looking for a healthier bread recipe - you have come to the right page.
This bread is not only healthy but moist, delicious and very simple to make.
Here is what you need-
1/4 cup olive oil
2 cups finely grated zucchini (squeeze excess water out)
1 tsp vanilla essence
1/2 cup of coconut sugar or honey
1 cup whole wheat flour ( if GF can be substituted for almond flour)
1 cup of oat flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
Optional - add your choice of nuts - I added walnuts and it combined nicely.
NOTE * you can substitute oat flour for regular flour and coconut sugar for sweetener of your choice.
Preheat oven to 350 degrees
Mix dry ingredients
In a separate bowl - mix all wet ingredients
Combine both wet and dry ingredients
Grease pan with oil or butter
Pour in mixture and bake for 35 minutes or until cooked through.
