It happened one night, when I had the munchies for something sweet but salty. Scheming through my cupboards there was no such mixture to be found. Dark home made chocolates in my freezer and salted mixed nuts in my pantry. And there it was a bottle of non GMO pop corn kernels staring me down. But knowing that I would need something sweet to balance of the salt, I pulled out the 100% maple syrup, the mixed bottle of nuts, the bag of pumpkin seeds, flax seeds, sunflower seeds and chia seeds and came up with this perfect combo – guiltless yet satisfying.

SERVES 6-8
INGREDIENTS
1 cup non GMO pop corn kernels popped in an air popper or on the stove
1/2 cup mixed nuts or your choice of nuts, cashew, peanuts, pecans, walnuts
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
2 tsbp chia seeds optional
2 tsbp flax seeds optional
1/2 cup melted butter grassfed unsalted
1/4 cup 100 % maple syrup or honey
1 tsp pink sea salt
1/3 cup raisins optional
1/3 cup cranberries optional
METHOD 1. Pop kernels in air popper 2. Place mixed nuts and seeds and butter in a pan and place in oven at 350 degrees for 10 minutes to toast 3. Mix popcorn with toasted nuts and seeds ( you may add the raisins and cranberries) 4. Drizzle maple syrup/honey and give it a good mix. 5. Add sea salt, mix again 6. Pat down mixture and place in oven for another 5-10 minutes 7. Serve and Enjoy!
