This salad is super easy to make and really you can recreate it to what you have in your fridge or pantry. Usually I use any leftovers to make a quinoa salad. But this one somehow is always the winner.
1 tbsp chopped parsley
1 tsp lemon
1 tsp grated ginger
METHOD Quinoa Salad Boil ½ cup quinoa Fluff and stir in: 2 tbsp. chopped bell pepper, ¼ cup rinsed and drained chick peas, 1 tbsp. chopped parsley, ginger, 1 tbsp. olive oil, 1 tsp. lemon juice, and salt and pepper to taste. Optional: Add ½ can tuna for a meatier meal.
