Vegan Mock Mayo
One of my to-go recipes when prepping for my Plant based Health Cleanse Programs.
It always comes back with a top review.
This Vegan Mock Mayo is made with lima or butter beans giving it a creamy texture and making eating Plant Based more doable than not!
Here is the recipe:
You will need :
13/4 canned (drained) or cooked lima/butter beans
2 tbsp fresh lemon juice
1 tbsp white wine vinegar or additional fresh lemon juice
4 cloves of garlic
1.2 tsp sea salt
1/4 tsp mustard
1/2 cup extra virgin olive oil
Place the beans, lemon juice, garlic, sea salt, vinegar, mustard and olive oil in a food processor or blender.
Process till creamy, drizzle more olive oil if need be.
Continue processing until well blended and completely smooth, stopping to scrape down the sides of the container as needed.
Refrigerate and use as needed!
