These Banana Quinoa Muffins will seriously take over as your family’s favorite muffin recipe, they are out of this world good! And trust me, no one will even be able to tell they are healthy, it can be your little secret. They are so sweet, they have the perfect texture, they are packed with protein, naturally sweetened, full of fibre, vegan, gluten free, and will seriously have your kids begging for more! You only need one bowl and some silicon muffin liners to make the most incredible muffins EVER!
2 cups Quinoa Flour
1-1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp Sea Salt
3 tbsp unsalted butter
1 cup Almond or Coconut Milk
1/2 cup coconut sugar
Pre-heat oven to 375°F. Line a muffin tin with paper liners or grease well with butter or oil. Or use non stick greasing muffin tins or silicone cups.
Mix dry ingredients in a bowl and set aside.
Melt butter in sauce pan on low heat.
In a large bowl add eggs and beat together.
Add milk, melted butter, coconut sugar and smashed banana to eggs and mix well.
Add dry ingredients to wet ingredients.
Bake for 25 minutes until the tops spring back when lightly touched.
