Ingredients:
• 2 boneless, skinless chicken breasts (cut into strips or kept whole)
• 1 cup almond flour
• 1/2 cup grated Parmesan cheese (optional for extra crispiness)
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp paprika
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp Italian seasoning (optional)
• 2 eggs
• 2 tbsp heavy cream (optional, for extra coating)
• 2 tbsp olive oil /coconut oil or avocado oil (for pan-frying)
Instructions:
1. Prepare the coating – In a shallow bowl, mix almond flour, Parmesan (if using), garlic powder, onion powder, paprika, salt, pepper, and Italian seasoning.
2. Prepare the egg wash – In another bowl, whisk the eggs and heavy cream together.
3. Coat the chicken – Dip each chicken piece into the egg mixture, letting the excess drip off, then coat it well with the almond flour mixture. Press lightly to ensure the coating sticks.
4. Pan-fry or bake
• Pan-fry: Heat oil in a skillet over medium heat. Cook the chicken for about 4-5 minutes per side (or until golden brown and cooked through).
• Bake: Preheat oven to 400°F (200°C). Place chicken on a parchment-lined baking sheet and bake for 20-25 minutes, flipping halfway.
• Air-fry: Preheat to 375°F (190°C) and cook for 12-15 minutes, flipping halfway.
Serving Suggestions:
• Serve with a side of avocado mayo, keto mayo, ranch, or sugar-free BBQ sauce for dipping.
• Add to a salad or pair with roasted veggies for a complete meal.
Enjoy!
