Kids Approved Mac & Cheese with Hidden Ingredients
This easy, homemade Mac & Cheese recipe adds broccoli and pumpkin to the mix, a great way to sneak veggies in a kid's favorite dish!
1 1/2 cups of brown rice or quinoa pasta
1 cup full fat heavy cream or full fat whole milk
1 cup pumpkin cooked and pureed
1 1/2 cup shredded mozzarella cheese
1/2 tsp salt
1/8 teaspoon garlic powder
1/8 tsp paprika powder
1/8 tsp black pepper
Sea salt to taste
Parsely to garnish
Option ( cubed cooked chicken breast)
Bring a large pot of water to a boil. You may add salt or a splash of olive oil. Feel free to add the broccoli here to steam together with the boiling pasta. I recommend towards the end so that you don't overcook the broccoli,
Add the pasta and cook according to directions. I recommend al dente. Drain in a colander.
While the pasta is cooking you can do sauce. Combine milk, pumpkin puree in a pan, heat and mix well. Add in the condiments and the cubed cooked chicken breast. (Optional)
Add the pasta and broccoli to the pan with the cream and chicken.
Add the cheese and mix all ingredients well together. Garnish with Parsley
