Made with ingredients such as spinach, pumpkin, carrots, herbs, plantain etc. These waffles are the trick to getting your kids to eat and like their veggies without the fuss and you my friend will be smiling from ear to ear.
Who says waffles are just a breakfast food? Let's break the rules and make them lunch and dinner too.
Here is the recipe:
Breakfast Waffle:
Banana Almond Waffle
1 cup almond flour ( you can substitute them for oats)
1 ripe banana
1 tbsp baking powder
2 eggs
1 tsp cinnamon
Pinch of salt
1 Tbsp of water
Method:
Blend all ingredients in a blender or food processor. Place batter in a waffle mix until ready and serve. Topped with almonds, fruit and honey.
Lunch Waffle:
Spinach Cheese Waffle (GF) - I like to call this one HULK
Ingredients:
1 cup GF flour
1/2 cup tapioca flour
3 eggs
1 handful of spinach
Herbs or pesto
1/2 cup of grated cheese (parmesan or cheddar)
Salt and Pepper
Method:
Blend all ingredients in a blender or food processor. Place in hot waffle skillet and cook till ready. Serve with chicken, tune, egg, salad, beans and a dressing of your choice!
