Delicious energy bars made with wholesome ingredients such as quinoa, oats and nut butters. Can be eaten for breakfast, as a snack or pre/post workout!
INGREDIENTS:
1 cup oats
½ cup uncooked quinoa
½ cup pure peanut butter (you may use any nut butter of your choice)
2-3 pitted dates
1/8 tsp sea salt
¼ cup agave
1 tbsp chia seeds
1 tbsp coconut oil
Optional – ¼ cup of Chocolate Chips
METHOD:
Step 1
Put a pan on medium flame and dry roast the quinoa, oats, for a minute. Then set these aside.
Step 2
Put a large pan on low flame and add honey along with peanut butter. Once they melt together, add the roasted quinoa and oats in it and combine.
Step 3
Blend the dates, coconut oil, peanut butter and agave until smooth. Add the roasted quinoa and oats in it and combine equally – Add in the Chia seeds and the sea salt. Next, line a rectangle baking pan (12 x 10-inches) with parchment paper.
Step 4
Press the mixture flat with your hands. Let it freeze or place in fridge for about 4 hours. Cut it into squares of rectangle bars, as desired. Stores in the refrigerator, for best taste. It stays fresh for up to 2 weeks. If you enjoy chocolate, you can add chocolate chips in the energy bar.
