Bring on the Veggies and let's make some Fries!
The other day I was asked to do a shoot for a local television show (Cup of Joe) where I am a regular guest focusing on Healthy meals for kids. I was asked to do a Kid Friendly Appetizer and a Dessert ( Nut Butter Oat Bar)
Kid friendly meals are my specialty - I have experimented every way to get my kids especially my son to eat more veggies and this recipe my friends is always a success.
Instead of flour to coat the veggies, I used almond meal mixed with parmesan cheese and seasoned it with sea salt and black pepper.
You need to do an egg wash, cut the veggies your prefered cut. I choose to make the carrots look a little like fries. You can basically do this recipe with any veggies like broccoli, cauliflower, carrots, zucchini, eggplant, christophene, bell peppers etc.
Once the veggies have been dipped in the egg wash - double dip them in the almond meal/parmesan batter and place in a sheet pan and into the oven at 350 degrees until golden brown.
